Once upon a time, humans ate a diverse array of bitter plants. Our gastrointestinal tract developed a complex relationship with bitterness-- including special receptors-- and we greatly benefit from this flavor for healthy function.
In this class, Sarah will explore the range of effects of bitters, including stimulation of digestive secretions, improved absorption of nutrients, support of healthy blood glucose levels and weight, and more. She will share samples of some of her favorite bitters, focusing on those that can be cultivated or sustainably wild-harvested in WNY. Samples of cocktails and bitter pastilles will be shared, along with recipes.
